Skinny Fajitas

These Skinny Fajitas are one of my favorites to throw together on busy week nights. I also like that I can prep everything ahead of time (during nap time) so I just have to put it in the oven at dinnertime.

Ingredients

  • 1lb pre sliced thin chicken breast

  • 1 Fajita seasoning packet (1.2oz)

  • 3/4 cup plain Greek yogurt

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 red onion, sliced

  • 2 Roma tomato, diced in large chunks

  • 3 TBSP chopped cilantro

  • 8 flour tortillas

  • Optional toppings: Mexican cheese, sour cream, guacamole, extra cilantro


Steps

  1. Mix everything but the tortillas into a large bowl.

  2. Spray a cooking sheet with non-stick spray and spread the fajita mixture evenly on the sheet.

  3. Cook for 20 - 25 minutes at 400 degrees. (Flip everything half way through).

  4. Warm the tortillas shortly before the fajitas are cooked.

  5. Serve with the toppings of your choice.


Tips

  • I love to serve these with refried beans and Spanish rice. If you have never tried the Trader Joes frozen Spanish rice add it to your list! It cooks in 7 minutes and only requires water to be added.
