Zucchini Chocolate Protein Muffins

I had Zucchini coming outs of my ears from our garden so these Zucchini Chocolate Protein Muffins are a great way to use them.

Ingredients

  • 2 cups grated Zucchini

  • 2/3 cup Unsweetened Applesauce

  • 1/3cup Maple Syrup

  • 2 large eggs

  • 1/4 cup olive oil

  • 1 scoop of Unflavored Protein Powder

  • 1 1/4 cup Whole Wheat flour

  • 1/4 cup unsweetened Cocoa Powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • 3/4 cup semi-sweet chocolate chips


Steps

  1. Mix the grated zucchini, Applesauce, maple syrup, eggs and olive oil in a mixer.

  2. Add a scoop of protein mix (I prefer Promix Whey Protein), whole wheat flour, cocoa powder, baking soda, baking powder, cinnamon, salt and chocolate chips.

  3. Don't overmix to help prevent the muffins from drying out.

  4. In lined muffin tins fill them 3/4 full of the batter and top with additional chocolate chips.

  5. Cook at 375 degrees Fahrenheit for 18 - 20 minutes.


Tips

  • Check with a toothpick before pulling out to confirm they are completely cooked.
