Roasted Red Potatoes

This is one of my go to side dishes I like to make. Its very versatile and goes with so many things. I also like that I can prep it ahead and then it cooks while I finish making the rest of dinner.

Ingredients

  • 1lb bag of small red potatoes, washed, unpeeled and diced

  • 2 Tablespoon Olive Oil

  • 2 cloves garlic, minced

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon rosemary

  • Salt and pepper to taste

  • 1/2 cup shredded parmesan cheese


Steps

  1. Wash and dice the red potatoes

  2. In a large bowl mix the potatoes, olive oil, garlic, and seasonings together. Ensure all the potatoes are evenly coated.

  3. On a cooking sheet place a piece of parchment paper down and spread the potato mixture evenly out.

  4. Cook at 425 degrees F for 30 - 40 minutes. Flip them halfway through and add the cheese on top.


Tips

  • These can easily be mixed up with a variety of other seasonings such as red pepper flakes, parsley, mozzarella, etc.
