Potato Pie

Growing up my mom made this all the time and called it Potato Pie, its a version of Shepherds Pie but the one I grew up with! Now that my mom is gone, I love making this for a cozy Sunday night dinner.

Ingredients

  • 1lb extra lean ground beef

  • 14oz can of corn, drained and rinsed

  • 28oz cans of tomato sauce

  • 5 - 6 large potatoes, washed and peeled

  • 1 medium zucchini, diced

  • 1/4 - 1/2 cup milk

  • 3 clove of garlic, minced

  • 1 White onion, diced

  • 5 - 6 Tablespoon unsalted butter

  • 1/2 teaspoon Oregano

  • 1/4 teaspoon thyme

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon red pepper flakes

  • Salt and pepper to taste

  • 2 cups cheddar cheese, shredded


Steps

  1. Sautee in 1TBSP of butter the minced garlic and white onion.

  2. Add 1 diced zucchini and cook for 5 minutes.

  3. Add the ground beef to the same pan.

  4. Season with salt, pepper, oregano, thyme, garlic powder and red pepper flakes.

  5. While the beef is cooking in a separate large pot bring 2 - 3 quarts of water to a boil.

  6. Cook the beef thoroughly breaking up evenly.

  7. Add to the same pan a can of corn drained and 2 cans of tomato sauce.

  8. Mix well and add additional seasoning if desired.

  9. Cover and let simmer.

  10. Peel and dice your washed potatoes. Put into the boiling water and let cook for about 20 minutes (until the potatoes are very tender).

  11. Once the potatoes are soft, drain the water.

  12. In the same pan you boiled them add part of your milk and remaining butter slowly and blend with a hand mixer. Season with salt and pepper.

  13. Adjust the mashed potatoes to taste preference.

  14. In a large casserole dish layer the bottom with the beef mixture. Top with the mashed potatoes.

  15. Cook at 365 degrees for 25 minutes.

  16. Top with shredded cheddar cheese and cook for an additional 5 - 10 minutes.

  17. Broil for 1 - 2 minutes to make the cheese crispy (optional).


Tips

  • This is an easy dish to make ahead and throw in the oven when you are ready to eat.

  • You can add extra veggies to this like shredded carrots if you want to sneak them in or substitute ones you don't like.

  • This is a bit of a meal in itself but if you want a side, I recommend a green salad.
