Peanut Butter Protein Balls

These peanut butter protein balls are great to have on hand for a fast breakfast or healthy snack. My toddler even loves them!



Ingredients

  • 3 cups quick oats

  • 1 cup peanut butter (I prefer Skippys Natural Creamy)

  • 1/2 cup chocolate chips

  • 1/2 cup coconut flakes

  • 1/2 cup honey

  • 2 scoops unflavored protein powder (I prefer Promix)

  • 1 scoop unflavored collagen (optional)


Steps

  1. Mix all the ingredients together in a large bowl. I use my Kitchen Aid

  2. Place mixture in the fridge for 20 - 30 minutes. This allows the mixture to firm up and roll together easier.

  3. Take a spoon and roll them into tight balls. Press it firmly together to help them stay together. It will make about 30 balls

  4. Store in an air tight container. They don't have to be refrigerated but I prefer them chilled. Last a week to 10 days.


Tips

  • Use mini chocolate chips.

  • Be sure to let the mixture chill long enough or the balls will be more difficult to form
