One Pot Spinach and Sausage Tortellini

This dish is one of my families favorite. Its quick and easy to throw together on busy nights and only needing one pot to cook everything in makes cleanup fast.

Ingredients

  • 1 white onion, diced

  • 3 cloves garlic, minced

  • 1/2 cup chicken broth

  • 30oz can of diced tomatoes

  • 30oz can of tomato sauce

  • 1 1/2 teaspoon Italian seasoning

  • 1 teaspoon oregano

  • 1/4 teaspoon red pepper flake (optional)

  • 1/2 teaspoon basil

  • 1/4 cup brown sugar

  • 14oz fully cooked sausage, sliced

  • 2 cups spinach, chopped

  • 15oz uncooked Tortellini

  • 1/2 cup heavy cream

  • Shredded Parmesan cheese for topping

  • Salt and pepper to taste


Steps

  1. Sautee the onion and garlic in chicken broth for 3 - 5 minutes.

  2. Add the diced tomatoes and tomato sauce

  3. Stir in all the dry ingredients.

  4. Add sausage and spinach. Stir well and cover simmering for 5 - 10 minutes to let the flavors develop.

  5. Add the uncooked tortellini and heavy cream.

  6. Turn heat up slightly and cook until tortellini's are done.

  7. Serve with parmesan cheese on top.
