Mocha Trifle Cups - Joana Gaines Inspired

These Mocha Trifle cups take some time to put together but honestly are as good as anything I've had in any restaurant and one of my top requested deserts by family and friends. These ones here have Cadbury Eggs on top since I made these for Easter but I love to change the topping up depending on the holiday or occasion (see the Tips below for alternative topping ideas).


Ingredients
Family size package of THIN oreos (12oz)
12oz package of semisweet chocolate chips
1/2 cup granulated sugar
2 Tablespoons instant coffee powder
5 Tablespoons water
Pinch of salt
7 large eggs
1 teaspoon vanilla extract
Cup toppings (fresh berries, mint leaves, Oreo, etc) - see tips for additional idea
Homemade Whipped Cream
2.5 cups heavy whipping cream
1 1/2 teaspoon vanilla
1 cup granulated sugar
Steps
In a medium saucepan heat the chocolate chips, coffee powder, salt, sugar and water together on medium heat. Stir frequently until the chocolate is melted and the texture is smooth.
Separate the egg whites and egg yolks into separate bowls.
Whisk the 1 tsp of vanilla into the egg yolks.
Take 1/4 a cup of the chocolate mixture and mix into the egg yolks to temper them.
Take the remaining chocolate mixture and pour into the egg yolks blending constantly with a hand mixer or in a Kitchen aid. Mix well.
In a separate bowl, blend the egg whites with an electric mixer until stiff. Fold them into the chocolate and egg yolk mixture being sure to not over mix.
Put the egg and chocolate mixture in the fridge to allow it to setup for at least 30 minutes.
Make the homemade whipped cream by putting everything into a bowl and using a hand mixer to beat on high until it thickens. Check the texture by taking a small amount in between your fingers and rubbing. Ensure there is now sugar granules to ensure its mixed enough. Set the whipped cream in the fridge as well.
While the chocolate mix and whipped cream setup in the fridge - blend the cookies finely in the blender or food processor.
Layer everything together in 10 - 12 small cups. Start with the cookie mixture, followed by chocolate mixture and whipped cream (repeat).
Put in the fridge until ready to serve.
Tips
I like to make these a day ahead of when I plan to eat them. This allows everything to set well but is not necessary.
Some toppings ideas to consider:
Candy canes or Gingerbread cookies - Christmas
Candy hearts or Hershey kisses - Valentines
Cadbury eggs or peeps - Easter
Oreo or fresh berries - any occasion
You can use regular oreos but I prefer the thins since I think they blend together better
I tend to do these in small disposable cups. They are very rich and people usually like to take some home.
