Italian Chopped Salad

This Italian Chopped Salad is incredible especially with the homemade dressing. Its the perfect side dish for a pasta or homemade pizzas.

Ingredients

  • 1 head of romaine lettuce, thinly chopped

  • 10oz cherry tomatoes, halved

  • 8oz mozzarella pearly

  • 1.2 red onion, sliced

  • 1 cucumber, diced

  • 1/2 cup banana peppers, sliced

  • 1/2 cup roasted red pepper, sliced

  • 1/2 cup kalamata olives, sliced

  • Italian flavored croutons

Dressing Ingredients

  • 1/4 cup red wine vinegar

  • 1/2 cup olive oil

  • 1 Tablespoon honey

  • 1 Tablespoon Italian seasoning

  • 1 teaspoon garlic powder

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste


Steps

  1. Prep your veggies and assemble together.

  2. Add the mozzarella pearls

  3. Take the dressing ingredients and mix into a small bowl.

  4. Toss the salad with the dressing and serve immediately.

  5. I like to serve with the croutons on the side so they don't get soggy.


Tips

  • To make your salad extra crisp, wash and cut your lettuce earlier in the day and store in the fridge. It gives the lettuce the extra crunch you get at restaurants.

  • I also like to cut all my veggies earlier and then mix everything together about 15 minutes before I'm ready to serve dinner. It keeps everything fresher and less likely to get soggy.

  • This is also great with grilled chicken.
