Homemade Crunch Wraps

We love Taco Bell at our house but don't love the extra grease so these Crunch Wraps have become a regular in our dinner rotation. I like that I can cook the meat and prep the veggies ahead of time then quickly assemble them when we are ready to eat.

Ingredients
1lb lean ground beef
1 Taco Seasoning packet
6 burrito size tortillas
1 cup of sour cream
Small bag of Doritos or Tortilla chips (We use Cool Ranch Doritos)
2 cups of shredded lettuce
1 diced Roma tomato
1 cup shredded Mexican cheese
4oz Nacho cheese
Steps
Cook the ground beef in a frying pan with the packet of taco seasoning. Crumble the beef and cook all the way thru. Set aside.
Heat the nacho cheese (I usually put mine in a glass bowl and microwave. It just needs to be warm as it will continue to heat on the griddle.
Assemble each crunch wrap by laying the tortilla flat on a plate. Start with a layer of nacho cheese, then ground beef, shredded lettuce, tomato, sour cream, crushed chips and shredded cheese.
Important - do not spread the toppings over the entire tortilla. Just spread in the middle of the tortilla leaving enough empty sides to be able to fold up. If you overfill the tortilla it will likely fall apart when you try to cook it.
Take the sides of the tortilla and fold up each side towards the middle of the tortilla.
Spray a griddle or frying pan with non-stick spray and put the folded tortilla seam side down. Cook for 2 - 3 minutes flipping halfway thru (or until golden brown on each side).
Serve with extra sour cream or salsa!
Tips
I like to cook these on a griddle so I can cook multiples at once.
This makes a fun build your own dinner for kids! You can use smaller tortillas and al ot less filling for smaller hands.
