This is a fancy version of a Bacon, Lettuce, Tomato and Avocado on a bagel. Perfect for an easy lunch or a light dinner.

Ingredients

  • Everything Bagel (I like Dave's Killer Bagels for extra protein)

  • 2-3 cups chopped romaine lettuce

  • 1 large tomato diced (I prefer beef steak tomato)

  • 6 thick cut slices of bacon (cooked extra crispy)

  • 3 Tbsp Chive and Onion cream cheese (I use Tilamook)

  • 1 avocado sliced

  • Salt and Pepper to taste

Steps

  1. Cook the bacon, ensure its extra crispy. I like to cook my bacon in the oven while I prepare everything else. Cook at 400 degrees on a baking sheet with tin foil lined under the bacon. Check at about 20 minutes. Pat the grease off before cutting into bacon bits.

  2. While bacon cooks mix the romaine lettuce, tomato, cream cheese, salt and pepper together. I mixed mine in the Kitchen aid since the cream cheese was a little thick.

  3. Hollow out the bagel a bit to prevent everything from falling out.

  4. Toast the hollowed out bagel.

  5. Place the BLT mixture onto the bagel and top with sliced avocado.

Tips

  • Be sure to pat dry the lettuce to make sure its not too watery

  • This makes enough for 3 - 4 bagels (depending on how full you want them). You can store the leftovers in an airtight container for a fast easy lunch.

  • You could swap out the bagel for wheat bread or sourdough as well.
