English Muffin Breakfast Pizzas with White Gravy

Growing up in Texas I'm a big fan of biscuits and gravy. These English Muffin breakfast pizzas are a great alternative to biscuits and gravy.



 

Ingredients

  • 1 package English Muffins (6 total muffins)

  • 1lb breakfast sausage

  • 1 cup cheddar cheese shredded

Scrambled Eggs

  • 8 large eggs

  • 1/4 cup cheddar cheese shredded

  • 1/4 cup milk

  • 1/8 teaspoon garlic powder

  • 1/8 teaspoon onion powder

  • Salt and Pepper to taste

White Gravy

  • 1/4 cup grease from sausage drippings

    • If you don't have enough grease which I rarely do, use 2 - 3 Tablespoons of butter

  • 1/2 cup all-purpose flour

  • 3 1/2 cups milk

  • Salt and Pepper to taste


Steps

  1. Cook the sausage in a medium pan. Set sausage aside and save the drippings.

  2. Mix the scrambled egg mixture together and cook on low to medium heat in a separate pan.

  3. Mix cooked sausage and scrambled eggs in a bowl together and set aside.

  4. Take the remaining sausage drippings and add part of the flour (you may not need the full 1/2 cup of flour so start with part of it). If you don't have enough drippings add 2 - 3 TBSP of butter to the flour and grease.

  5. Cook the flour in the grease and butter for 3 - 5 minutes until it thickens up. Start to slowly add the milk and constantly stirring.

  6. Add salt and pepper while playing with the texture of the gravy. You want it to be thick but still slightly runny to be able to dip the pizzas in.

  7. While the gravy is cooking, slice the English muffins in half and lightly toast.

  8. Put a spoonful of egg and sausage mixture on each half of the English muffins and place on a baking sheet.

  9. Top with shredded cheese and place in the oven under High broil. Cook for 2 - 3 minutes watching closely not to burn.

  10. Serve with the gravy on the side or smothered on top of the breakfast pizzas.


Tips

  • Instead of shredded cheese on top you can use sliced cheese, I use half a slice per English muffin.

  • My husband, toddler and I only eat about half of this in a morning so I only cook 3 English muffins up and save the other half for another morning to quickly throw together.
