Croque Monsieur

Every time I watch, Its Complicated with Meryl Streep, Alec Baldwin and Steve Martin I crave these Croque Monsieur's she makes in the movie so I decided to attempt them one night. They turned out better than I expected and made a very filling meal. I served it with my Spinach Berry Salad and it was the perfect pairing.

Ingredients
Bechamel Sauce
1/4 cup butter
1/4 cup flour
3 cups Whole Milk
2 garlic cloves, finely minced
1 sprig Thyme
1 sprig Sage
1 Teaspoon lemon zest
Pinch of nutmeg
1 cup Gruyere cheese, grated
1/2 cup Parmesan cheese, grated
Salt and Pepper to taste
Sandwich Components
12 slices of sourdough bread (this will make 6 sandwiches)
1lb thin sliced ham
1 1/2 cup Gruyere cheese, grated (you can get pre sliced if its easier to work with)
1 cup Parmesan cheese, grated
Steps
Make your bechamel sauce by melting the butter and flour into a medium sauce pan mixing well.
Add the milk, garlic, thyme, sage and salt and pepper. Cook until thickened (about 5 minutes) stirring frequently.
Add the lemon zest, nutmeg, 1 cup Gruyere and 1/2 cup Parmesan cheese.
Mix well and set aside to cool. You don't want it to completely cool since you want to be able to spread it but cool enough it wont burn you as you work with it.
On a baking sheet lay parchment paper on it.
Taking your sourdough bread, spread the cooled bechamel sauce onto each side of all the bread.
Lay 6 slices on the cooking sheet and layer with ham and some additional gruyere and parmesan cheese.
Top off with another slice of sourdough bread.
Top the bread with the remaining cheese.
Bake in the oven at 425 degrees Fahrenheit for 20 - 25 minutes.
Broil for 1 - 2 minutes. Sprinkle with additional thyme and sage
Serve hot!
Tips
Use freshly shredded cheese to make your sauce, it melts much better.
You can use slices of cheese inside the sandwich if that's easier/less mess to assemble.
Make your sauce 5 - 10 minutes before you are ready to assemble the sandwiches, you want it too cool down a bit but not completely. It makes it easier to spread onto the bread without burning yourself.
Serve with a side salad or fresh veggies for a good contrast.
