Crockpot French Dips

These crockpot French Dips are one of my go to meals for busy days. It takes 5 minutes to put together in the crockpot and just set it and forget it until dinner time. The best part it makes your house smell heavenly and tastes even better.

Ingredients
1.5lb Boneless rump roast
1 packet of Onion Soup Mix
2 cups Beef broth
Salt and Pepper to Taste
1 Au jus gravy mix
One dozen soft dinner rolls
Steps
Place the roast into the crockpot.
Salt and pepper all sides of the roast.
Pour the beef broth around the roast. You should only need 2 cups, just ensure it comes up about half way on the roast.
Sprinkle the onion mix on top of the roast.
Put the crockpot lid on and put on low for 8 - 10 hours.
When the roast is done cooking prepare the au jus.
Put one cup of water, the au jus packet and 1 cup of beef broth from the crockpot into a saucepan and heat on medium heat whisking the packet in well.
Note - be sure to strain the beef broth and save the discard to put back onto the meat for additional flavor.
Shred the roast and keep in the remaining beef broth to keep it tender.
Serve on buns (I like to use the local bakery dinner rolls) with a side of au jus sauce to dip.
Tips
I prefer to shred the roast with two forks or bear claws for thicker cuts of meat. However, if you want more finely shredded meat you can separate the roast in a few chunks and place in your KitchenAid with the paddle to shred quickly and finely.
