Chicken Lemon Veggie Pasta

This is a great light and quick week night pasta. There are multiple shortcuts you can take for this pasta. Overall I would say this takes less than 30 minutes to put together and is very flavorful but leaves you less stuffed as typical pastas since there is no sauce to it.

Ingredients
16oz bowtie pasta (or any bite size pasta)
2 - 3 boneless chicken breast
I often just use frozen pre cooked chicken bites or strips (22oz bag)
1 teaspoon lemon zest
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
1 teaspoon lemon pepper seasoning
1/4 - 1/2 teaspoon red pepper flakes
4 Tablespoons olive oil
Salt & Pepper to taste
1 zucchini, diced
1 yellow squash, diced
3 cloves garlic, minced
4 Tablespoons butter
1/4 cup fresh lemon juice
1 cup parmesan cheese, shredded
Parsley for garnish
Steps
Start to boil water and cook pasta according to package.
Pour half the olive oil in a separate large pan. If using chicken breasts season each chicken breast with half the dry seasonings then place into the pan and cook 3 - 5 minutes no medium to high heat flipping occasionally. Remove the chicken and dice then put back into the pan.
If using pre cooked chicken (which is what I do most often to save myself time) just put the pre cooked chicken into the olive oil with half the dry seasonings and cook for 2 - 4 minutes stirring occasionally on medium to high heat.
Add diced zucchini, yellow squash, minced garlic, remaining olive oil and dry ingredients to the chicken. Continue cooking on low to medium heat until vegetables are soft but not mushy.
When the pasta is cooked, mix into the chicken and veggie mixture along with lemon zest, lemon juice, butter and parmesan cheese. Mix well and top with parsley before serving.
Tips
You could use a variety of vegetables in this dish including broccoli, cauliflower or diced carrots.
The frozen chicken saves alot of time and tastes just as good in my opinion.
