Chicken Kabobs

Kabobs are a great and easy summer dinner. I love that you can mix it up with so many different vegetables and meats. This is an easy chicken kabob to marinade with items you often have in the pantry.

Ingredients
Marinade
1lb large diced chicken breast
1/3 cup olive oil
1/4 cup soy sauce
2 Tablespoons fresh squeezed lemon juice
2 Tablespoons brown sugar
2 Tablespoons Balsamic Vinegar
2 cloves garlic, minced
Salt and pepper to taste
Variety of vegetables diced large - Red bell pepper, green bell peppers, yellow bell peppers, zucchini, red onion, etc
1/3 cup olive oil
2 cloves of garlic
Salt and pepper to taste
Steps
Marinade the chicken and set in an air tight container for 1 - 24 hours.
Dice the vegetables and coat in olive oil, salt and pepper.
Layer the chicken and veggies on skewers.
Cook on the grill at 500 degrees for 10 - 15 minutes rotating halfway thru.
Let it sit for 5 minutes before serving, covered in foil
Tips
Serve with green salad, rice as a side dish or potatoes.
