Chicken Broccoli Bake

This Chicken Broccoli Bake is a great comfort food dish perfect for busy weeknight dinners.

Ingredients
1lb chicken, cooked and shredded
1 box Chicken Stuffing mix
1 yellow onion, diced
1 cup shredded carrots
1 zucchini, diced
1 large head of broccoli, steamed and diced
2 cups chicken broth
1 can cream of chicken
1 can cream of mushroom
3 cloves of garlic, minced
2 cups of cheddar cheese, shredded
Salt and pepper to taste
Steps
Bring a large pot of water to a boil, cook your chicken and then shred.
In a large bowl mix the cooked chicken, stuffing mix, diced onion, carrots, zuchini and steamed broccoli together.
Grease a 9X13 casserole dish and spread the chicken mixture evenly.
In another bowl mix the chicken broth, cream of chicken, cream of mushroom, garlic, salt and pepper together. Pour evenly over the chicken mixture.
Cook at 400 degrees covered with foil for 30 minutes.
Add 1 cup of cheddar cheese and mix well.
Top with an additional cup of cheddar cheese. Put back into oven uncovered for 15 minutes.
Broil for 2 minutes (optional)
Tips
You can use a rotisserie chicken if you prefer to not boil your chicken.
You can undercook the broccoli slightly since it will continue to cook in the casserole dish
