Burrata, Tomato and Basil Gnocchi

This is an easy but impressive and flavorful dish. Be sure to use the freshest ingredients you can to make this extra delicious.

Ingredients

  • 3 cloves of garlic, minced

  • 3 Tablespoons olive oil

  • 4oz of Pancetta (optional)

  • 14oz can of diced tomatoes

  • 10oz cherry tomatoes, quartered

  • 1/4 teaspoon red pepper flakes

  • 1/4 teaspoon onion powder

  • 1lb Gnocchi

  • 8oz Burrata

  • 1/4 cup fresh Basil ribbons

  • Salt and Pepper to taste


Steps

  1. In a large Dutch oven pot sauté the minced garlic in olive oil. Add the pancetta.

  2. Add diced tomatoes and fresh cherry tomatoes.

  3. Season with salt, pepper, red pepper flakes and onion powder.

  4. Let simmer on low for 10 - 15 minutes.

  5. Cook the gnocchi according to the package (save some pasta water when draining).

  6. Add the cooked gnocchi to the Dutch oven pot.

  7. Pour in 1/4 cup of pasta water if you need.

  8. Tear up the balls of burrata and add to the dish.

  9. Top with fresh basil and enjoy.


Tips

  • You could leave on the pancetta or substitute with a different preferred meat like Italian sausage if you want.
