Burrata Bruschetta

If I see Bruschetta on a menu, I am more than likely going to order it. So I love that this Burrata Bruschetta is one that I can easily make at home when I'm hosting or just want something delicious to snack on. Fresh ingredients is key to making this taste exceptional.

Ingredients
6 - 10 garlic cloves, roasted (separated)
4 Ciabatta breads, sliced and quartered
7 Tablespoons of Olive Oil (separated)
10 oz of Cherry Tomatoes, halved
1/2 cup fresh basil, cut into ribbon strips
Balsamic Glaze (approximately 2 Tablespoons)
2 balls of Burrata
Salt and Pepper to taste
Steps
Roast your garlic, separate the cloves leaving the skin on. Put in a medium pan on high heat. Shake in the pan occasionally for 10 - 15 minutes.
While the garlic is roasting cut the Ciabatta bread and lay out on a baking sheet.
Take 5 - 6 of your roasted garlic cloves and mix with 4 Tablespoons of olive oil.
Brush the Ciabatta bread with the olive oil mixture and bake at 375 degrees for 15 - 20 minutes (you want the bread slightly crisp but not burnt).
Mix the remaining olive oil and roasted garlic with the cherry tomatoes, basil and salt and pepper.
Once the bread is toasted spread the Burrata on each slice then top with the cherry mixture. Drizzle Balsamic glaze and top with additional salt and pepper if desired.
Serve immediately
Tips
If you want to assemble things ahead of time for a dinner part or a night in - you can cut all your veggies and prep your bread ahead of time, just wait to assemble to tomatoes onto the bread until you are ready to eat.
