Breakfast Tortilla Pizza

This is the perfect healthy and delicious breakfast. I love it because you can prepare the ingredients the night before to throw it in quickly the next morning to the oven while you get kids ready or drink your coffee.




 

Ingredients

  • 1 Burrito Size Tortilla

  • 4 Large Eggs

  • 1/3 cup Cottage Cheese

  • 1 cup Spinach chopped

  • 1 cup shredded Mozzarella Cheese

  • 1/2 Red Bell Pepper diced

  • 1/2 Green Bell Pepper diced

  • 1/2 tsp Onion Powder

  • 1/2 tsp Garlic Powder

  • Salt & Pepper to taste


Steps

  1. Grease a pie pan and place tortilla in the pan. Preheat oven to 375 degrees.

  2. Mix all the remaining ingredients together in a mixing bowl. (Save half the cheese to top).

  3. Pour the egg mixture over the tortilla. Sprinkle the remaining cheese on top.

  4. Put in oven for 20 - 25 minutes. Check the middle of egg mixture to ensure its fully cooked before pulling out.

  5. With a large spatula, move the tortilla pizza to a cutting board and slice like a pizza. (I like to cut mine into 6 slices).

  6. Serve plain or with hot sauce.


Tips

  • You can mix the egg mixture the night before and pour over the tortilla the next morning.

  • You could easily adjust the cheese and vegetables with what you have in hand.

  • One pie pan is enough to feed my husband, myself and young kids. But I would make two if your kids eat alot or you have more than two adults for breakfast.

  • This reheats very well in the air fryer
