Avocado Mozzarella and Basil Pesto Salad

Summer time is here and that means backyard BBQs and grilling! This Avocado Mozzarella and Basil Pesto Salad is a great side dish and a nice change up from the typical green salad.



Ingredients

  • 10oz grape or snacking tomatoes, sliced

  • 1 cucumber, diced

  • 1/2 red onion, long diced pieces

  • 8oz mozzarella pearls

  • 2 avocados, diced

  • 1/4 cup basil pesto

  • 1 lemon, juiced


Steps

  1. Prep all your veggies - wash and dice/slice.

  2. Put all the veggies and mozzarella in a large bowl.

  3. Put the basil pesto and lemon juice on top of all the salad. Mix well coating everything evenly.

  4. Salt and pepper to your preference.

  5. Enjoy!


Tips

  • If you want to prep this ahead I would cut all the veggies (except the avocado) and place in a bowl along with the mozzarella. Cover and refrigerate. Then add avocado, lemon and salt and pepper shortly before you're ready to eat.
